The real chanterelle (or the Common chanterelle, or the Rooster) is a well-known representative of the diverse kingdom of Mushrooms, especially valued for its unique quality: no worms. Due to this quality, real chanterelles are kosher products – allowed to be eaten according to the religious precepts of Judaism.

The nutritional value of mushrooms grown in an environmentally friendly environment, nutritionists have no doubt, and natural drying does not change their internal composition:

-dry chanterelles consist of a quarter of valuable protein, the concentration of essential amino acids in which the shrinkage process increases;
-about 10% of the composition is “occupied” by high molecular weight carbohydrates – polysaccharides. One of them, chitinmannose, has an anthelmintic effect and helps kill worms, and ergosterol is useful in liver disease (hepatitis, fatty degeneration);
many trace elements, in the highest concentration of copper and zinc, and vitamins A, PP, B1. In addition, real chanterelles are a source of rare vitamin D2 – ergocalciferol, which enters –our body only with food.
The pulp of fresh mushrooms has a sour taste, which disappears when dried and boiled. With natural chanterelles you can cook many delicious dishes – salads, snacks, soups, stews, casserole. You just need to cut them smaller – because of the chitin whole mushrooms are difficult to digest.
